About Inspections
The Williamson County & Cities Health District inspects food establishments
to safeguard the publics' health by assuring that food is provided in a safe and
sanitary manner. Environmental Health Services staff inspects food establishments 2-4
times a year, determined by the risk of the population served and the types of
food served (i.e. hospital cafeterias would have a higher risk rating than a
convenience store).
The WCCHD food inspectors are trained through education and on-the-job
experience before they perform inspections. Food inspectors adhere to the
most current version of the
Texas Food
Establishment Rules (TFER)
which went into effect March 15, 2006. The new format focuses on causes for food
borne illnesses.
Food Service Inspection Scores
During an inspection, demerits are given for any deficiencies in the
acquisition, storage, handling, and preparation of food found during the
inspection. Demerits are not given for items such as dirty floors and walls.
These issues are addressed under a different time schedule for
correction. The goal is to leave our restaurants with all deficiencies
corrected. All critical items must be corrected before the inspector leaves the
establishment. The remaining items, such as equipment repair, will have a time
schedule for correction.
The accumulation of thirty (30) demerits indicates a need for immediate
corrective action in all areas, with a follow-up inspection in 48 hours to
insure that procedures have been initiated to comply with TFER. There are 27
items listed on the inspection form. Fourteen of the 27 items inspected are
considered critical violations and indicate a need for immediate correction. We
will not leave the establishment until these health violations have been
